The Best Watermelon Mojito Recipe to Celebrate National Mojito Day
In case you haven’t heard the news, Thursday, July 11 is National Mojito Day, which is a pretty big deal over here at Music & Mojitos. We’ve already created our list of the best places to celebrate National Mojito Day in New York City, featuring some of our favorite spots like Amor Cubano, Blend on the Water, and Cafe Habana.
But what if you’re on a budget, a homebody at heart, or hosting friends on your rooftop terrace? (A girl can dream, right?).

That’s why we’re presenting you with one of our most favorite cocktails EVER: the watermelon mojito. Consider it our gift to you on this National Mojito Day 2019.
The watermelon mojito is everything you could possibly need in a summer cocktail: it’s light, refreshing, and sweet without being cloying. And of course, it gets its lovely tropical pink color by taking advantage of the freshest seasonal fruit available: watermelon!
In our quest to craft the perfect concoction we tried out a few variations of this cocktail, but the one we keep coming back to is inspired by this delicious recipe for watermelon mojitos by Vanilla and Bean.
What we loved about this recipe was the addition of club soda—the subtle effervescence differentiates these watermelon mojitos from their flatter competition. If you don’t have any club soda on hand, it’s not the end of the world - simply add more watermelon puree (or rum—we’re not judging).
And speaking of rum, the best kind for your mojito is a light white rum. We’re huge fans of Bacardi Silver, which is what we used to craft our perfect watermelon mojitos.

Before you start assembling your mojito, we highly recommend you make this recipe for simple syrup beforehand so it can start chilling in the fridge. We made ours the night before, but you could probably get away with making it 60 minutes in advance and popping it in the refrigerator.
The last thing to note before we jump into the recipe—make sure not to overly-muddle the mint leaves. Doing so causes the mint to release bitter oils that will spoil the taste.
Prep Time: 10 minutes
1 whole lime + extra for garnish
6-8 mint leaves + extra for garnish
1 oz. simple syrup
8 oz. watermelon, puréed + extra for garnish
4 oz. Bacardi Silver rum - get your bottle on Engrave My Wine
Dash of club soda
Ice, Cocktail Shaker, Highball Glass
Purée a few pieces of sliced seedless watermelon using a handmixer. Discard the pulp that won’t break down (or save them for a smoothies). Reserve 8 ounces of juice for the mojitos and set aside.
Cut lime in half; quarter each half so there are 8 pieces of lime.
Put cut limes into cocktail shaker with simple syrup. Using a pestle or a wooden spoon, muddle lime juice and simple syrup for 10-15 seconds, releasing the juice from the limes. Add the mint leaves and continue to muddle for about 10-15 more seconds.
Add the watermelon juice and rum to the cocktail shaker. Fill with ice and shake until cold.
Pour mixture between two highball glasses filled with ice, leaving enough room to top with a dash of club soda. Garnish with min sprigs, sliced watermelon, limes - however you fancy!
And there you have it! The perfect watermelon mojito to celebrate National Mojito Day 2019.
What’s great is that the recipe can easily be adjusted to suit your taste. If you prefer your cocktails sweeter, add more simple syrup; if you dislike fizz, remove the club soda. You could even swap out the watermelon for other delicious summer flavors like cantaloupe or mango.
